Gunpowder is a classic item of Chinese green teas, originally produced 100 years ago in Pinshui, Zhejiang Province. It is a highly processed tea, with heavy rolling, followed by long pan-firing of up to 8 hours per batch. Then, extensive grading is involved to classify the quality by size, shape, and density. This tea presents advantage of easy storage and easy transportation. The tight pellet holds well its fragrance inside the ball. When brewed, the little palettes gradually open in hot water to release their warm amber color and a mellow, quite strong, slightly astringent flavor with a lasting aftertaste.
