Inulin, a storage carbohydrate, is a natural food ingredient present in many fruitsand vegetables. It is composed of fructose units linked together by glucose unit.Almost every molecule is terminated by a glucose unit. The artichoke Inulin is a fructooligosaccharide derived from Jerusalem artichoke by a process similar to that used in extracting sugar from sugar beet.Inulin can improve the theology of food products, related in particular to the perceivedmouth feel through its particle gel structure. So Inulin can improve the taste and texture of products and enhances the flavor of fruits, provides body and mouth feel to fat or sugar reduced products.Inulin has high binding capacity.
