CBH - inulin, a storage carbohydrate, is a natural food ingredient present in manyfruits and vegetables. It is composed of fructose units linked together by glucoseunit. Almost every molecule is terminated by a glucose unit. The artichoke Inulinis a fructooligosaccharide derived from Jerusalem artichoke by a process similarto that used in extracting sugar from sugar beet.Inulin can improve the theology of food products, related in particular to the perceivedmouth feel through its particle gel structure. So Inulin can improve the taste andtexture of products and enhances the flavor of fruits, provides body and mouthfeel to fat or sugar reduced products.Inulin has high binding capacity.
